I have just installed Quilt with no mods, but it’s still crashing.

Are you able to launch a vanilla instance? That error implies your MC just doesn’t work at all for some reason, not just Quilt.
I don’t really know why but after restarting the launcher a couple of times, it works ¯_(ツ)_/¯
